Everything’s Better with Butter: Episode 4 – Cooking with Butter

Chocolate Cake

2 cups sugar
2 eggs
2/3 cup oil
2 tsp vanilla
Beat above for 4 minutes
(add when sifted alternately with 2 cups of boiling water starting and ending with flour mixture)
2/3 cup cocoa
2 2/3 – 2 3/4 cups flour
2 tsp baking powder
2 tsp soda
1 tsp salt
Coconut Pecan Frosting
1 cup evaporated milk
1 cup sugar
3 egg yolks
1/2 cup butter
1 tsp vanilla
1 1/3 cup flaked coconut
1 cup chopped pecans
Combine milk, sugar, eggs, butter and vanilla in a saucepan.  Cook and stir over medium heat until thick – about 12 minutes.  Stir in pecans and coconut.  Beat until thick enough to spread.
Apply frosting to cake, bake at 350 for half an hour.
